French Onion Mac & Cheese
Like French onion soup? This dish has the same rich flavors, without the soup! Four onions look like a lot, but they shrink tremendously as they’re caramelized.
Servings: 4 people
Ingredients
- 1/2 c. butter
- 4 medium onions, halved lengthwise and sliced thin
- 1/4 tsp. sugar
- Salt and pepper
- 8 oz. dried elbow macaroni, or small shells
- 2 tbsp. olive oil
- 10 oz. Swiss or Gruyère cheese, shredded
Instructions
- » In a large skillet, melt butter over Medium heat.» Add onions to skillet. Cover and cook 10 minutes, stirring occasionally.» Remove the lid, and reduce heat to Medium-low. Sprinkle onions with sugar, and salt and pepper to taste.» Cook uncovered, stirring frequently, 30-45 minutes, or until onions are a deep gold color. Onions should have a sweet flavor, and not be burned.» When onions are close to done, cook macaroni in boiling, salted water, until al dente.» Drain macaroni, then return to the pot, and toss with olive oil.» Stir cheese into macaroni, until mixed thoroughly and melted.» Season macaroni with salt and pepper to taste.» Serve macaroni topped with onions.
