Green Chili and Chicken Mac & Cheese
Green chilies add a bit of a kick to this Mexican-inspired version.

Ingredients
- 1 box macaroni & cheese
- 1/4 c. milk
- 1/4 c. margarine
- 1 tbsp. vegetable oil
- 1/4 c. onion, diced
- 1 1/2 c. cooked chicken, diced
- 6 oz. stewed tomatoes, drained and chopped
- 1 can (4.5 oz.) diced green chilies
- 1/4 c. sour cream
- Salt and pepper
- 1/4 c. shredded Jack cheese
- 2 tbsp. chopped fresh cilantro
Instructions
- » Prepare macaroni & cheese with milk and margarine according to directions on the box, or use your favorite variation.» While macaroni is cooking, heat oil in a large skillet, and sauté onion until translucent.» Add chicken, tomatoes, and chilies to skillet, and stir well.» Cover skillet, and cook over Low heat 10 minutes, stirring occasionally.» Stir sour cream into skillet.» Combine chicken mixture with macaroni & cheese, stirring to mix thoroughly.» Season with salt and pepper to taste.» Serve macaroni sprinkled with shredded cheese and cilantro.
