Creole-Style Mac & Cheese
A dish for spicy food lovers! If you want to tone it down, you can substitute mild sausage for the hot links, and cut down on the Creole seasoning.

Ingredients
- 1 box macaroni & cheese
- 1/4 c. milk
- 1/4 c. margarine
- 2 tbsp. butter
- 1 c. onion, diced
- 2 cloves garlic, minced or pressed
- 2/3 c. celery, chopped
- 2/3 c. seeded and diced green bell pepper
- 1 tbsp. chopped parsley
- 1 tsp. Creole seasoning
- 1/2 lb. Louisiana hot links
- Salt and pepper
Instructions
- » Prepare macaroni & cheese with milk and margarine according to directions on the box, or use your favorite variation.
» While macaroni is cooking, melt butter in a skillet over Medium heat.» Sauté onion, garlic, celery, bell pepper, and parsley, until onion is translucent.» Stir Creole seasoning into vegetables, mixing well.» While vegetables are cooking, slice the hot links into 1/2-inch slices. Sauté them in a separate skillet until lightly browned.» When macaroni & cheese is prepared, mix it together with vegetables and hot links.» Season with salt and pepper to taste.Variations» Just omit the hot links for a great side dish.
