Crocpot Mac & Cheese
This recipe takes all day, but don’t worry! It’s very easy, and requires minimal active time.
- 8 oz. dried elbow macaroni
- 2 eggs, beaten lightly
- 1 1/2 c. milk
- 1 can (12 oz.) evaporated milk
- 2 1/2 c. (10 oz.) sharp Cheddar, shredded
- Salt and pepper
- » In a large bowl, mix eggs, milk, and evaporated milk, combining thoroughly.» Reserve 1/2 c. shredded cheese. Stir remaining 2 c. cheese and macaroni into milk mixture. » Season mixture with salt and pepper to taste.» Spray inside of crockpot with non-stick spray.» Pour macaroni mixture into crockpot. » Sprinkle reserved cheese on top.» Cook on Low heat for 5 hours, or until edges are beginning to brown. Leave it alone as it cooks – don’t open the lid or stir.
