Mac & Cheese Carbonara (Bacon and Parmesan)
Here’s a mac & cheese take on carbonara, without the traditional raw egg.
Servings: 3 people
- 1 box macaroni & cheese
- 3 tbsp. milk
- 3 tbsp. margarine
- 1/4 lb. bacon, chopped
- 1 large clove garlic, minced or pressed
- 1/4 c. dry white wine
- 3 tbsp heavy cream
- 1/2 c. grated Parmesan cheese
- Salt and pepper
- 2 tsp. minced fresh parsley (optional)
- » Prepare the macaroni & cheese according to box directions, but use only 3 tbsp. each of milk and margarine.
» While macaroni is cooking, cook bacon in a skillet over Medium heat, stirring occasionally, until lightly browned.» Add garlic to skillet, and cook, stirring, 1 minute.» Add white wine to skillet, and simmer 5 minutes, until reduced slightly.» Add cream to skillet, and simmer 2 minutes.» When macaroni has been prepared, add the bacon mixture and the Parmesan cheese, and mix well.» Season with salt and pepper to taste.» Serve immediately, sprinkled with parsley if desired.
