Mac & Cheese Low Fat Special
Why give up the food you love? This version is low fat, and has veggies to boot. You can eat this, and still feel good about your diet!
- 1 box macaroni & cheese
- 1/4 cup fat free milk
- 1/4 lb. mushrooms, sliced
- 2 cups cups fresh spinach, coarsely chopped
- 1/2 red bell pepper, seeded and chopped
- Salt and pepper
- » Preheat oven to 350 degrees.» Cook the macaroni until al dente, and drain.» Return macaroni to pan. Add cheese sauce from package and milk, and stir until well combined. Do not add butter or margarine.» While macaroni is cooking, spray a non-stick skillet with cooking spray.» Sauté mushrooms in skillet over Medium heat, until lightly browned.» Add spinach and red bell pepper to skillet. Cover skillet, and leave on heat for 2 minutes. Spinach should be wilted. Remove from heat.» Stir veggies into macaroni & cheese. Season with salt and pepper to taste.» Put macaroni and vegetable mixture into a shallow baking pan, patting down evenly. Bake for 30 minutes, or until top is barely beginning to brown.Variations» Different Veggies – Substitute your favorite vegetables, or whatever you have on hand. Broccoli, green beans, or tomatoes are all good options.» Chicken – Add cooked chicken breast or white turkey meat.
