Our favorite tomato sauce - yummy on any kind of pasta!Makes 1 1/2 cups
Ingredients
3 tbsp.extra virgin olive oil
1/2 yellow onion, finely diced
1/4 c. dry red wine
14 oz. can tomato puree
1 tsp. salt
1 1/2 tsp. sugar
1/2 tsp. pepper
1 tsp. dried oregano
Instructions
» Heat 2 tbsp. olive oil in a non-stick skillet over Medium-high heat, until hot but not smoking.» Sauté onion in the skillet until translucent.» Add wine to skillet. Cook until the wine is much reduced and you have a kind of purple onion slurry.» Add the tomato puree, salt, sugar, pepper, and oregano.» Simmer sauce 15-30 minutes, until thickened nicely.» Just before serving stir remaining tbsp. olive oil into sauce.
