Sprinkle zucchini with salt and pepper as it cooks.» Reserve 6 nice basil leaves for garnish, and chop enough to give 3 tbsp. chopped basil.» When mac & cheese is prepared, add zucchini, chopped basil, and 1/4 c. of the Parmesan, combining thoroughly.» Season with salt and pepper to taste.» Divide macaroni among serving dishes.» Sprinkle remaining Parmesan over each dish, and garnish with reserved basil leaves.
